Honestly, I'd like to have any guest with a connection to movies, whether that be an actor, director, writer, VFX, editor, etc.
I also enjoy having guests that aren't necessarily connected to the movie in a direct way. For example, having an FBI profiler on when we watch "Silence of the Lambs." More or less, a guest that has knowledge of the subject covered in the film.
The show is very free-flowing and fun. It's a good way to let off some steam while being informative and entertaining. The interviews last between 20 and 30 minutes usually.
